Tomatoes

Mom and Dad arrived yesterday with the childhood bunk beds Ellen and I shared. We decided to store them in the attic until we get around to remodeling the bedroom in the basement. Collin seemed to think we were planning to assemble them in the attic, because he kept asking if he was going to sleep up there. After dinner at Famous Daves, Mom insisted on teaching me how to freeze the tomatoes I tried to send with her for canning.

Teach a man to fish...or in this case, a woman how to store her own tomatoes!

Freezing Tomatoes
Bring water to rolling boil on stove
Blanch tomatoes in canning strainer for 45 seconds and place immediately in ice water
Peel and rinse
Cut in half, inspect tomato and place in Pyrex measuring cup
Smash gently and pour into freezer bag
Label and freeze

*Including the tomatoes we purchased at the Bloomington Farmer's Market, we froze 24 quarts this season.
